Last week we had an unexpected guest- a friend who is like family needed a place to stay until his new apartment became available. Of course we were still in "wish we could get inspired to make our house look more liveable and unpack boxes" so this was just the kick in the butt that we needed.
With the recent move we've been slacking on cooking for ourselves as well as unpacking so we knew we would need dinner cooking while we made space in the spare room. I had been slowly collecting the ingredients for this slow cooker recipe so we threw it all together and let it cook.
Crockpot Cranberry Pork Roast via: A Year of Slow Cooking
We ate the roast over rice and we ALL gave it thumbs up- so be sure to give it a try. (FYI: I used canned cranberry sauce and added about 2 Tbs of brown sugar. I also used regular raisins because that is what we had in the house.)

Because I was so impressed with how quickly the slow cooker was actually able to cook the roast, I am going to try my hand at this delicious looking mac n' cheese recipe- hopefully tonight. I'll let you know how it goes :)
Update: The "quick" mac n' cheese night turned into a "no" mac n' cheese night after I realized the mushrooms in the fridge needed to be used asap. So alas, the mac n' cheese will wait for another night and we licked our plates clean of beef stroganoff...
